Chipotle Salmon Croissant Sandwich

Chipotle seasoned salmon and smoky chipotle spread on a buttery croissant

Ingredients (Makes 1 Sandwich)

  • 1 Croissant
  • 1 4oz Salmon Fillet, Skinless
  • 2 Strips Turkey Bacon
  • 1/2 C Baby Spinach
  • 1/4 Small Red Onion, thinly sliced
  • 1/4 tsp Lemon Pepper
  • 1/4 tsp Oregano, ground
  • 1/4 tsp Salt
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Paprika
  • 1/8 tsp Chipotle Chile Pepper, Ground
  • Spicy Chipotle Spread:
    • 1 Chipotle Pepper in Adobo Sauce, Canned
    • 1/4 C Mayo
    • 1/8 tsp Smoked Paprika
    • 1 Chive Sprig, Chopped
    • 1 T Cream Cheese, softened

You will need:

  1. Mince 1 canned chipotle pepper (about 1 tablespoon minced). Chop 1/2 T of chives.
  2. Blend mayo, minced chipotle pepper, smoked paprika, cream cheese and chopped chives. Refrigerate spread until ready to use.
  3. Season salmon with paprika, salt, lemon pepper, ground oregano, ground chipotle chile pepper, and garlic powder.
  4. Sear salmon on both sides. Cook under medium heat until cooked to an internal temperature of 145 degrees Fahrenheit.
  5. Crisp turkey bacon in skillet.
  6. Toast Croissant in skillet.
  7. Spread chipotle spread on toasted croissant and layer sandwich with salmon, turkey bacon, onion and baby spinach.
And of course, serve with potatoes on the side.
